PEMANFAATAN EKSTRAK KULIT BUAH NAGA MERAH BERDASARKAN PENGARUH UKURAN PARTIKEL SEBAGAI INDIKATOR ASAM-BASAPADA PROSES TITRASI
Abstract
Kulit buah naga memiliki kandungan senyawa golongan flavonoid, salah satunya adalah antosianin. Antosianin ini
dapat berubah warna seiring berubahnya nilai pH sehingga dapat diaplikasikan sebagai indikator titrasi asam-basa.
Tujuan dari penelitian ini untuk memanfaatkan ekstrak kulit buah naga merah (Hylocereus polyrhizus) sebagai
indikator titrasi asam-basa dari hasil esktraksi berdasarkan pengaruh variasi ukuran partikel (3,00 × 3,00 × 1,00 ) cm
; (-14+18); (-18+20); (-20+70); (-70+100); (-100+120) mesh. Ekstrak diperoleh dengan cara ekstraksi maserasi selama
24 jam dengan pelarut etanol 96 % : asam sitrat 10 %. Hasil penentuan trayek perubahan warna didapat pada saat
kondisi asam berwarna cokelat muda dan saat kondisi basa kuning terang. Hasil rendemen tertinggi didapat pada
ukuran partikel -14 + 18 mesh sebesar 30.42 %. Ekstrak diuji coba sebagai indikator titrasi asam-basa dengan rentang
pH 8.3–10.0 untuk pembanding indikator pp, sedangkan pembanding yang digunakan metil jingga didapat pH 3.1 –
4.4. Sehingga ekstrak kulit buah naga merah ini dapat digunakan sebagai indikator pada titrasi asam-basa.
